Description
Delicate and quietly vibrant, this light roast comes from the Kochere district
of Yirgacheffe, where small family farms surround the Kochere mill
operated by Matewos Ersemo and his family. Working with over 650
farmers, each harvest is carefully sorted, fermented, and washed before
being slowly dried on elevated bedsβturned by hand under watchful eyes
until it reaches perfect balance.
The result is a cup that feels both bright and comforting, shaped by
patience and precision at every step. Made from indigenous Ethiopian
cultivars, this coffee offers a soft, refined characterβclean, expressive, and
gently complex, like a calm morning with just a touch of lightness to it.
Ethiopia Yirgacheffe
From the highlands of Kochere, where coffee first found its voice, this
Yirgacheffe tells a story of patience and precision. Grown by a network of
small family farms and carefully processed at the Kochere mill, each cherry
is hand-picked at peak ripeness and thoughtfully washed to reveal its true
character.
Dried slowly under the Ethiopian sun and guided by generations of craft,
this coffee carries the elegance the region is known forβfloral, citrusy, and
tea-like in body. In the cup, it opens with notes of jasmine and lemon,
softened by peach and a gentle hint of vanilla.
A delicate expression of place, shaped by altitude, tradition, and the hands
that bring it to life.
V60 Switch: 20g (grind size 5 β 1350 rpm)
Bloom at 86 degrees (switch closed, 60ml, brew for 1 min).
Open switch for 30 seconds.
Close switch, pour to 120ml with 94 degrees water, brew for 30 seconds.
Open switch for 30 seconds.
Next pour to 250ml, wait 30 seconds, last pour to 320ml.
